There are a few facts one must know when it comes to Mexican food: Queso is king; Chipotle can’t be beat, and no matter what anyone tells you, tequila is NEVER a good idea.
While Chipotle can’t be beat, it can be copied. After all, imitation is the sincerest form of flattery, and until a Chipotle opens up within the 63129, flattery will have to do. Honestly, this is the easiest dinner you’ll make all week.
Ingredients
- Minute Rice
- Black Beans
- Frozen Chicken Strips
- Tabasco Chipotle Sauce (the most important part!)
- Guacamole (I used Wholly Guacamole Singles)
- Cheese
1. Microwave your rice according to package. Add to bowl.
2. Microwave your black beans (covered), add to bowl. (See where I’m going here?)
3. Microwave your chicken, add to bowl.
4. Add Tabasco sauce as desired. I like to add it twice – personally, I don’t believe you can ever have enough – this is what makes the bowl!
5. Top with guacamole, cheese and more Tabasco sauce. Pour yourself a drink and dig in!
It was so good, I brought the leftovers for lunch (minus the chicken.)
