Eat It: Open-Faced Hamburgers

Ah, Sunday afternoon. The sounds of football fill the house, leftovers get eaten and we prepare for Monday.

If you’re anything like me, your Sunday is filled with family visits, laundry, last-minute shopping and cleaning before heading back to work. Luckily, this super easy burger recipe pleases the whole family, and takes just about 15 minutes!

Review: HelloFresh Meal Delivery Service

I love delivery service. Call me lazy, but the fact that I can order a new pair of boots, toilet paper, three bottles of wine and dinner to be delivered on my door step makes me incredibly happy. Doesn’t everyone love coming home to packages?

My work wife, Meesh, informed me about these meal delivery services. She lives in Miami, so I immediately thought they wouldn’t be available to me in the Midwest. Luckily, I was proven wrong, and on I went to my first HelloFresh box.

HelloFresh is a subscription service that delivers fresh meal ingredients straight to your doorstep (or in my case, office cube.) Each week, a new menu is released with five recipes for the classic box, and five recipes for the vegetarian box.

I ordered the classic box for two, and in a week, a box filled with ice packs arrived full of fresh veggies, meats and spices. My choices? Delicious.

Spicy Tuna Tar-Tacos:

Meesh warned me that her friends complained about the amount of chopping. I kind of laughed, thinking “It’s fresh food! Of course it doesn’t come pre-sliced.”

This recipe made me realize why there were complaints. I like to cook, but I’ve never chopped more vegetables for a recipe in my life. But guess what? It was totally worth it. You could pre-chop the veggies the night before making the meal, but it really doesn’t take too long.

Coming off of a sushi high from the weekend before, the spicy tuna flavor was perfect. I’m not a fan of scallions or radishes, but the two came together perfectly with cucumbers and avocado to top each taco. As far as serving size, you’re given six flour tortillas, but we filled four with the ingredients provided, and I was definitely full after eating these!

Parmesan-Crusted Chicken:

Chicken Parmesan is a staple in my household. It’s one of my husband’s favorite meals, and one of my “fanciest.” When I saw that HelloFresh had their own version on this week’s menu, my ears perked up.

The chicken was good, but the honey mustard flavor was a bit over-whelming. The sides though – to die for! The roasted tomatoes are delicious and super simple, which means they’ll become a new weeknight staple. I must admit, I used garlic powder in lieu of the minced garlic – ain’t nobody got time to mince garlic. The balsamic potatoes had just enough of a balsamic kick to leave you wanting more, but I did use quite a bit of salt and pepper to increase the flavor.

Plantain and Black Bean Tostadas:

Real talk – I had no idea what a plantain was until a client had us do a graphic about the history of bananas. For the record, it’s a starchier banana.

Unfortunately, I didn’t get to make this recipe in time before some of the ingredients went bad, but I was able to save the black beans for my burrito bowls! If you get a chance to make them, please let me know how they turn out!

VERDICT: HelloFresh hits the spot, especially after a weekend away when you haven’t had a chance to hit the grocery store. The recipes are easy to follow, if not a bit time consuming, and the taste is fantastic.

Top 5: Things Guys Don’t Understand

Jenna Marbles is a female god. If you haven’t watched her videos, just get off my blog. JK – but really, watch the below videos for my inspiration.

NOTE: I am basing this off of things the men in MY life don’t understand. (Sorry Andy!) Feel free to add your own in the comments.

1. Hobby Lobby: I could craft 24 hours a day, 7 days a week if I had the budget and time. Girls want things to look GOOD – i.e. why we buy insane amounts of clothing and take two hours to get ready. This means we will spend 3-4 hours wandering through a Hobby Lobby, debating over the perfect shade of rose and the perfect size pumpkin. As Andy says, Hobby Lobby is my Bass Pro/Golf Discount/ETC. Just remember that.

2. Planning: Yes, I keep a planner, physical calendar, digital calendar and notes around. I will absolutely plan out our weekend plans by Monday, and you can bet I’ve had a three week notice of your family party. I know exactly when that game, birthday or movie release is, and I’ve already talked to my other female planner friends to involve their boys, too. Someone has to keep everything in line.

3. The Bachelor/Bachelorette: You have fantasy sports teams, we have Bachelor brackets. And yes, we absolutely get too involved with the characters, develop a deep hatred for bitchy girls and fall into mad showmances with rich, damaged guys with six packs, and cry when they don’t get a rose. Most of this is due to the copious amounts of wine we drink during the two-hour show.

4. Pinterest: Is it safe to say that Pinterest is female porn? It’s like once you get your first look, you’ll never stop going back. So what if I have been planning our wedding long before you even consider an engagement. Maybe I do have a thousand work out plans I’ll never try. So I started my Christmas List six months early, no big deal. As long as I keep putting delicious food on the table, keep your mouth shut – don’t act like you don’t know where I got those recipes.

5. Target: I mean, seriously. I have never gone into Target and only bought what I came for. The place screams “buy me.” Of course I needed two new tanks, a pair of shoes I’ll never wear, three new nail polishes, throw pillows, and a kitchen gadget I can’t even pronounce. At least I get 5% off with my RedCard – that makes it ALL better, right?

Operation Skinny: Day 1

As I’ve mentioned before, I’m getting back into shape. Or at least trying. I hit Supplement Superstore last night and caved into the DB Goddess Prime Fast Pack. Luckily with my purchase came a buttload of knowledge. I’ll upload the forms later, but their certified sports nutritionist (ahem – all of them are.) helped figure out a plan for 6 small meals a day including a mixture of protein, carbs and veggies. As you can guess, 6 meals is a LOT. My biggest fear was how it would affect my Weight Watchers points, but I think I’m doing OK.

Seriously, I love taco night.DAY 1:

6:15am: Strawberry Milkshake Protien Shake, blended with frozen Strawberries – 3 points, Protein & Carbs. I don’t know about you, but I cannot stand the taste of protein shakes! Blending in the strawberries definitely helped. Andy picked out the flavor a few months back, but I cannot fathom spending $57 on powder, so it will have to do. If you have any suggestions to make it better, PLEASE let me know!

9:05am: Weight Watchers Egg Salad, 1 slice Whole Wheat Toast, Tomatoes – 5 points, Protein, Carbs & Veggies. This egg salad is bomb dot com. You mix 4 hard boiled eggs with 2 hard boiled egg whites (just cut them in half and remove the yolk). Add 2 tbsp of low-fat mayo (Hellman’s!), a tbsp of mustard (they suggested dijon, but I only had yellow), salt and pepper. It makes four servings, which is perfect for the week!

12:00pm: Ground Turkey, low-fat Mexican Cheese, Lettuce & Tomato on a Whole Wheat Wrap – 8 points, Protein, Carbs & Veggies. I’m obsessed with taco night. I always make extra meat for left overs!

2:50pm: Yoplait Low Fat Orange Sunrise Yogurt, Carrots, 2 slices of Lean Ham – 5 points, Protein, Carbs & Veggies

As far as dinner goes, we’re going to Blarney Stone with my parents, so we’ll see if I can (healthily!) get in my Protein, Carbs & Veggies. One of the most important things he said was to NOT have carbs in your final meal of the day. With all this food, I’m not sure I’ll want a 6th meal! As with most plans, you have to adapt them for yourself.

I had the great plan to workout this morning, however I got all the way to the office (we have a gym) just to realize my dress and blazer were sitting on the bar stool at home. BUMMER. I took my lunch hour to jump on the crossramp machine for 20 minutes, which might be my new favorite invention for the pure fact that you can control which muscles your working. I’ll keep you posted on how I do, as well as great work outs and recipes!

Nom Nom Nom: Avocado & Queso Tuna Salad

Let’s be honest – I’m definitely the type who would rather eat nachos and cheese for lunch then something healthy, but since I’m doomed to be in a bikini in two weeks (hello Florida!), I’m trying to keep it together.

I borrowed “The Flat Belly Diet” from the library this weekend, and while I’m not following the plan exactly, I definitely learned some tips! Most importantly, to include a MUFA (monounsaturated fatty acids) in every meal. These include avocado, nuts and seeds, oils, olives, and dark chocolate. So I picked up avocados (easily my favorite on the list!), sunflower seeds (if you have a trick to eating these, PLEASE comment. I look like an idiot!) and peanuts to snack on.

Looking through some of the recipes, I noticed tuna stood out a LOT. Mind you, I like fish, but mostly the cooked kind. But I gave it a try. And guess what? I liked it!

Ashley’s Tuna Salad (what, you think I have a special name for it or something?

  • 1 pack Starkist tuna in sunflower oil
  • 1/2 avocado, sliced
  • 1 wedge, Laughing Cow Queso Fresco cheese
  • Two small tomatoes
  • 1 sandwich pita

Pour your tuna into a bowl (or tupperware container). Mix in avocado with a fork. Add cheese and mix in. (You’ll really have to mix it!) Spread on pita. Serve with tomatoes.

See? That’s easy!

Another recipe I’m loving (which is SO easy) is Sassy Water.

  • 2 liters of Water
  • 1 lemon, sliced
  • 1 cucumber, sliced
  • 1 teaspoon ginger root, grated
  • 12 mint leaves

Put everything in a pitcher, refrigerate overnight. It’s SO refreshing!
